I've got a Pinterest board full of one pot meals but which ones do you make that work and are nice?

Various rice dishes - risotto/paella/fried rice/Mexican rice
Stir fries
Gnocchi with pesto and green veg

I would suggest Perfect Pot Roast. I have tried it several times and my kids really like it. Aside from it is delicious it is also easy to make.
Seared and then roasted in broth for three hours, For a larger 4- to 5-pound roast, plan on roasting for four hours. You'll know it's ready when the meat is fall-apart tender.
