Nice summery lunch for in laws

We are having the in laws over for lunch a week on Sunday and I am hoping that the weather will warm up a bit. I usually make a roast or pasta dish with salad and bread so I am looking for alternatives!

She says to use fresh corn on the cob but I've always used tinned and don't think anyone has complained!

I agree with Ada about salmon, asparagus and rhubarb!
There are loads of internet recipes for salmon and asparagus tarts and quiches. If you're a confident cook and want to impress, try Mary Berry's salmon and asparagus en croute.
I'd avoid pastry for pudding if you do it for main course. It's hard to beat a good rhubarb crumble, but the recipe for rhubarb and strawberry meringue pots on BBC Good Food might just do it!
