Wanted to share this as I know how much lemony things are loved here. I made this when the Aero family were staying and was most impressed(if I say so myself!!!)
Pastry case(I bought mine in M&S, or you could be even cleverer and make it)
6tbsp lemon curd
225g cream chees
rind and juice of a lemon
50g caster sugar
1 egg yolk
1 egg
150ml soured cream
peeled lemon slices/zest to decorate
Heat oven to 160 degrees
Spread the lemon curd over the pastry case
Beat together the cream cheese, lemon rind and juice, sugar, yolk and egg and then spoon over the lemon curd.
level the top.
bake for 30 mins until filling is firm to the touch. Allow to cool. The mixture develops a crack, but I liked that!
The recipe says to spread the sour cream over and decorate with the zest and slices. I served the cream separately in a jug. Also ice cream is mmmmmmmmmmmmmmmmmmmmmmm with it.
