No hob

I’m house/pet sittin for a lovely lady for 2 weeks soon and she’s let me know the hob in her flat doesn’t work. So I’ll have an oven and a microwave.
I’m a veggie and just looking for some good veggie tray bake ideas as I tend to make a lot of stir fry/rice based dishes which will be harder!

You can do rice in the microwave. Do you have a slow cooker you could take? You can throw rice/pasta in at the end.

search online there are great tables that tell you how long to steam pasta.rice.all veggies in the microwave for.sometimes as simple as sticking them in a bowl with some water base.and a slight lid..
you can also do egg I nthe microwave.
roasted oven baked veggies.
jacket potatos and a stew.
wedges
oven bakes rice.
couscous.
baked foil parcels with fish potatos and vegg and noodles in side.
instead of yrou stir fry could you stick them in and oven prof dish,all the same ingredient perhaps some more liaquid stock and bake them
veggie burgers
flat breads.
tortilla pizzas.
pies.
oven cooked quorn mince with pie topping.sliced potatos topping.
roast some peppers.sweet potato,veggies then stir through couscous.or serve on toasted bread.
shops have packets of steamed veg for the micrave.and potatos.
thre are some really good microwave grain packets now.the supermarkets have really up there game on them.

Eat more couscous - doesn't need cooking, just boiling water from the kettle

I'm a fan of big tray bakes of roasted veg (tomatoes, peppers and onions as standard usually but will add butternut or aubergine) with olive oil, garlic and chilli. Eaten on couscous with goats cheese.

Stuffed peppers? we stuff ours with rice (use the rice that comes in bags and can be microwaved. I don't usually microwave it first if stuffing peppers), raisins, pine nuts, cinnamon and chunks of halloumi cheese. Could also try stuffed tomatoes/ courgettes/ mushrooms/ butternut with preferred flavourings. Ricotta and spinach, topped with parmesan is nice in butternut. Mushrooms work well with any kind of cheese I think.

I'm not 100% sure of this one because I haven't done it in a while but I think it was roasted aubergine then at end mixed with tahini, yoghurt and lemon juice. Might not be substantial enough for a main meal.

Does she have a bbq? If not most things can be done in the oven. Haloumi and veg skewers.
Stuffed mushrooms
Could you brown off some veg at home? mushrooms, onions, courgettes etc then freeze and take with you so they could be added to things and cooked through in the oven?
