Quick help -- whole chicken

I've currently got a whole chicken defrosting in the fridge but suddenly have no idea what to make. Meal planner is blank so clue what it was intended for! Anyway, I'm going shopping in the morning so need some inspiration for what to make for dinner tomorrow night involving a whole chicken. It's for me, DP and 13m old DS.cant involve mushrooms or rice.

Any suggestions? Thanks! Smile

Garlicky, lemony roast chicken and crispy roast potatoes. (My death row meal).

Spatchcock it, rub with garlic and herbs and serve with salad and new potatoes.

As it's warm tomorrow I'd suggest Lorraine pascal's peri peri chicken served with salad, coleslaw, new potatoes etc.

The peri peri is only on the skin and juices of the chicken so you could slice into the breast meat and that'd be fine for your ds.

In this weather I would just do a roast chicken self serve with salad and crispy bagettues.

if you don't fancy a roast then I do recommend Nigella's praised chicken - it is delicious, deceptively simple when you read the recipe, very soothing and homely.

Sorry - just saw no rice -you could still do with bulgur wheat.
