Share your best traybake and loaf cake recipes

I tend to stick with the same few recipies for tray bakes and loaf cakes but I'd like to develop a wider reptoire, so please share your favourite recipes with me.

Banana and chocolate chip loaf cake

Melt 150g caster sugar, 125g butter and 1tsp vanilla essence in a saucepan.
Mash 3 bananas, add to the sugar mixture and mix.

Mix in one beaten egg.
Add 60ml milk and 190g SR flour and mix.
Add 100g chocolate chips and mix.
Scatter some more chocolate chips or finely chopped dark chocolate on top.
Bake in greased & lined 2lb loaf tin at 160 for about 50-60 minutes.

It's super quick and easy and tastes great, I made one today.
