Anything that's meat and egg free please?! I've ran out of ideas! I'm so fed up of chickpeas and lentils so something rather extravagant would be nice haha! Thanks in advance Smile

Assume dairy is ok? How about roast veg (peppers tomatoes courgette etc etc) with pasta and crime fraiche and pesto warmed through and stirred through? Could also add in some sun dried tomatoes - lovely!

Is cheese ok? Fresh halved cherry tomatoes and torn up mozzarella sprinkled on top of spaghetti with red pesto. Add lots of black pepper and basil leaves - really quick to make.

Curry with mushrooms, potato (or sweet potato I'd you prefer) and spinach. You can bring some tofu chunks or quorn in if you like.

Fajitas. Readymade wraps/ tortillas, salsa and sour cream. Filling is basically stir fried peppers, onions and paneer slices/ mushrooms, with fajita spice mix.

Fresh rice noodles, microwave to heat up. Stir fry thinly sliced onions, capsicum, beansprouts, carrots (I get the ready prepared packets!).Add noodles, soy sauce, salt and pepper.
