Want a meat free week (and hoping to extend it if it goes down well with the rest of the family). What are your go to midweek (ie not too long and complicated) vegetarian meals? To make things harder, I have a tomato hater so non-tomatoey ones in the mix would be great. Tia

Pesto pasta:

I like Sacla's pesto - they do a nice vegan one and it's easily available.
Roast some veg. (Tomatoes, peppers, mushrooms, courgettes.)
Boil pasta.
Throw in some rocket leaves & seeds.
Easy and very tasty.

Stir fry: couple of onions, chopped or sliced; cloves of garlic, crushed; punnet of mushrooms, sliced - add to large pan, stir fry. In the meantime microwave some new potatoes and slice; also head of broccoli, chopped into florets and add to pan. Finally add protein: chopped boiled egg or halloumi or tofu. I often use prawns but clearly not vegetarian.

Macaroni cheese - substitute butternut squash for some of the cheese - healthy and delicious. And the kids don’t know they’ve eaten a vegetable Shock

I love the Fresh India book for midweek veggie curries. Most freeze well too so good for doubling up.

Ching He huang has the world's easiest tofu and edamame stir fry. It is lush and I can eat it night after night.

Just an FYI pesto is not vegetarian unless stated on the jar. There is a cheese in it which contains "animal products".
