Roast Sirloin Beef - cook day before event

Any advice on how to roast sirloin beef the day before an event and reheat it successfully? Do you have to refrigerate the beef or will that dry it out...want to pre-slice and gently reheat in gravy?

Thanks!

I’m not sure I would do it but then I like mine pretty rare. How many are you cooking for?

20 adults, but have a curry planned too

If you want it to be nice ... don't

Do you have to warm it up? Won’t it ruin the meat?

I really wouldn't if you can help it. What's the reason for not cooking on the day? What are you serving it with, as a roast dinner?

Why don't you make life easy - leave the beef cold - serve new potatoes - salad - mixed pickles - mustard - always goes down well here.
Enjoy whatever you decide.
