i favour the chuck-it-all-in-a-pot type approach because hate faffing at the stove when people are here

or anything else easy to prepare in advance that requires minimal last-minute prep

no restrictions in terms of ingredients, except i am pg so no meat that would be best served pink

Beef bourginon is a doddle. Do it with roast potatos and mixed veggies which you can prepare in advance and just reheat (as in the veggies)

curry ? could make a couple of different types then just buy some nann bread and dips to go with it.

Just need to double this. It's flamin' delicious. I usually serve it with rice.

Chicken and Olive Casserole (this is the ½ recipe for 2 people)

Olive oil for stir frying
2 chicken breasts
1 ½ red peppers
1 onion
4 slices smoked bacon
1 clove of garlic
1 ½ tbsp chopped fresh oregano (or 1 tsp of dried)
½ jar of passata (approx 350g)
1 oz black olives
Fresh basil leaves (shredded)

  1. Pre ? heat the oven to Gas 4
  2. Brown chicken and peppers on the hob. Remove them from the pan
  3. Add onions and bacon and cook for 10 minutes adding the garlic and oregano for the last minute
  4. Return chicken and peppers to the pan with the passata. Cover and cook in the oven for 1 hour
  5. Add olives then return to oven for 30 ? 45 minutes
  6. Remove from oven and sprinkle basil over the top. If you want to, before adding basil you can add a handful of parmesan

Stroganoff is a good one to make in advance and needs you to do very little once guests here.

Jamie's chicken and sweet leek pie can be made well in advance too, and Dh says it is great.
