I want to make a chocolate cake for my son's 16th birthday -he is sitting his GCSE Chemistry exam on his birthday and GCSE PE the following day - so I am wanting to make the cake as special as I can. I am quite a good baker but my chocolate cakes can be a bit dry. Any chocolate cake recipe ideas will be very welcome.

Lorraine Pasqual's recipe for "I don't give a damn chocolate cake" this is a favourite in our house. I often cover it with maltesers.

She uses creme fraiche which keeps it moist.

Nigellas old fashioned chocolate cake always works well for me. I use Greek yoghurt instead of the sour cream, just because I always have some in the fridge and I make a chocolate ganache (chocolate and double cream) instead of the icing in the recipe.

adding a splash of camp coffee to the mix.make sure you eggs are large.replace the coco with flour.
buttercream choc icing made with coco and melted choc and again splash of camp.
we make in shallower two circle tins so you don't overcook.rather be slightly under than over.
make buttercream beforehand and sit in fridge.
always use more coco than it says.taste test.youll no when its ur idea of chocolatey hehe

I make this regularly for school bake sales, birthdays etc, it's a firm favourite in our house.

It's a very wet mixture but turns out beautifully and everyone asks for more.

I used this recipe with salted caramel buttercream for DPs birthday last month. The waitress asked if She could pay me to make one for her birthday Grin

I use vegetable oil, but you could use sunflower or coconut without much taste difference
