I make The Dinner Lady's chicken curry for DH and 5y DD:
225g carrots, peel and dice quite small
225g onions, peel and roughly dice
1 garlic clove, peel and finely chop
225g eating apples, peel and core and dice (cover with lemon juice to stop them going brown)
1tbsp olive oil
1tbsp mild curry powder
2tsp tumeric
450g diced chicken
25g plain flour
600ml water
55g sultanas
1tbsp mango chutney
Put onions in pan with olive oil, and cook over moderate heat until soft. Add garlic, carrot, curry powder and tumeric. Cook for further 10 minutes or until carrots are soft. Add chicken. Stir all ingredients together and cook for 5 minutes to seal chicken.
Mix flour and water together until smooth. Sieve mixture into the pan. Stir well, cover and cook for 25-30 minutes.
Add the apples, sultanas and mango chutney and mix. Leave to cook for further 10 minutes.
Serve with rice and naan.
