All from scratch, quite rice heavy this week.

Steak and baked potato mushrooms & peppers
Pulled lamb shoulder with honey glazed carrots and parsnips and r pots
Chicken, mushroom, pepper and rice wraps
Beef hoi sin and homemade egg fried rice.
And on Friday will be whatever I get on the way to midlands for the weekend,
Sat & sun will be eating out 😊

Tonight: red curry fried rice
Saturday: pasta with tomato and chilli sauce, spinach and mushrooms
Sunday: I’m running a marathon... probably just beer tbf
Monday: my friend is making a chickpea and roast veg lasagne sounds divine
Tuesday: something basic like mushrooms on toast
Wednesday: I’ve got a big day at work if it goes well big pizza takeaway if not reheated curry from the freezer
Thursday: parsnip, broccoli and goats cheese bake
Friday: roasted carrot “risotto”

Tonight: chioppino
Tomorrow: take away pizza
Wednesday: veggie stir fry and rice
Thursday: I’m out so I think the rest are having chicken noodle soup
Friday: not sure yet, something concocted out of the veg box
Saturday: going out
Sunday: BBQ!

Gnocchi with a roast butternut squash and thyme sauce (this is delish) and a side of tomato salad and a green salad.

Lebanese spiced roast veg and chickpeas as a warm salad with leaves and herbs and a lemon dressing.

Pasta with pesto and peas and baby broad beans (after netball day need to eat asap).

sausage couscous with apricots and almonds and a side of a carrot salad. Might do a cucumber and dill salad and also some tadziki or something too.

Out all the other evenings

Butter chicken curry with rice

Heck sausages with homemade Yorkshire's, pots, veg and gravy

Jacket potato with tuna mayo and salad

@lastqueenofscotland it’s not really a recipe so much as what veg I have in at the time and changes every time. It’s v easy.

But it would be something like this for 2 people:
1 pepper
1 red onion
2 carrots
20 baby toms

Large dice the veg, halve the toms. Put in a roasting tray with Tesco finest Lebanese 7 spice mix and oil. Rub. Roast for 15 mins.

Add the drained tin of chick peas to the roasting tin. Roast for another 10 mins.

Make a lemon dressing with juice of a whole lemon and enough good oil to emulsify into a nice dressing (and salt and pepper).

Divide a bag of watercress and rocket (or other preferred salad) between two big bowls. Tip over half the veg mix onto each. Add the dressing.

It’s also good with feta and watermelon, or hallumi if you have any in.

Oh also add fresh coriander or parsley or mint leaves depending what I have in. Or all three! This week just coriander.

This evening we had roast vegetable pasta with lots of garlic (and chilli for the adults)
Tomorrow is roast chicken, roast potatoes, lots of different vegetables.
Saturday chicken, mushroom and courgette risotto with left over chicken
Sunday chicken noodles with left over chicken
Monday we are out
Tuesday haven’t thought that far ahead Grin

Tomorrow: “Greek” bubble and squeak, sort of made up but it’s nice - instead of leeks it’s got peas, red onions, feta and kale in it. Have with fried mushrooms
Sunday: chickpea, red pepper and kale curry
Monday: sundried tomato and feta salad
Tuesday: cous cous stuffed mushrooms
Wednesday: gnocchi goats cheese bake
Thursday: stir fry of some description
Friday: pasta with broad beans, leaks, peas and asparagus

Thursday

Lunch: vegetable soup
Dinner: poached salmon, mushroom and parsley sauce, baked sliced potatoes, roasted aubergine, courgette and butternut quash

Friday

Lunch: vegetable soup
Dinner: roast chicken (seafood for me), new potatoes, salad

Saturday

Lunch: out for Tapanyaki
Dinner: sausage and egg muffins

Sunday

Brunch: full English

No idea for rest!

This evening I had chicken fajitas
Tomorrow will be the left over fajitas
Wednesday is spiced rice with coriander chicken ( www.gousto.co.uk/cookbook/chicken-recipes/coriander-chicken-spiced-rice ) I don't get the boxes just using the recipe

Thursday and Friday we're having Jamie Oliver's proper blokes sausage pasta. Hate the name but somebody here recommended it and it's gorgeous

chunky vegetable stew & cheesy dumplings
spanish chicken bake
filled pancakes - filled with creamed spinach
chicken katsu curry
middle eastern style roast lamb, with harissa & sumac with coconut rice
leftover lamb thing with butter beans & spinach

Sunday was beef chilli, potatoes with sides of various dips and salads
Tonight was prawn and veg stir fry with sweet & sour sauce and rice
Tuesday will be feta pie, potato and veg
Wednesday will be chicken enchiladas with fried veg, cheese, avocado etc
Thursday will be baked salmon with peppers and rice
Friday fish and chips, peas

Sunday was roast chicken
Monday was soy and ginger baked salmon with roasted med veg and brown rice
Tuesday was prawn and coriander stir fry with rice noodles
Wednesday - pork medallions with roasted fennel, mini roast potatoes, broccoli and a (bought) peppercorn sauce
Thursday - Fay Ripleys thyme, lemon and broad bean chicken with brown rice and side of broccoli - it's amazing, simple and delicious, I can eat a highly inappropriate portion of it!
Friday - curry - maybe homemade or maybe from the takeaway depending on how the day pans out!

Realised we've had/got meat or fish planned every day! Maybe paneer for the curry then! Grin
