Best way to cook a huge fillet of trout

they're large

I quite like simple

how would you cook 'em then?

bake in foil (because that's the most forgiving way of cooking fish IME) with lots of thyme stuffed into their tummies

I'd still cook in foil even if tummy-less. With a dab of butter, a spoonful of white wine, some lemon, some herbs.

You can still cook them in foil. Put in some flavourings, some veg (we normally use mange tout, asapargus, spinach etc.) and some liquid such as stock or wine). Close up the foil and bake in oven on approx. 200 for about 10/15 mins. It's dinner in a bag! Alternatively Rick Stein does a lovely trout dish with bacon and a red wine vingear reduction.

resounding foil baked solution it is

have thyme growing in garden ..

was planning on brocolli and carrots .. would they foil bake then? ... I know mushrooms would

.. and look an excuse to open a bottle of white

They would foil bake providing they're not too large. Effectively the liquid steams everything so all very healthy. I would imagine we are having something similar as DP is doing dinner this evening.

trouble with frying/grilling is that it's easier to overcook and end up dry on outside before middle done.
I would only fry if I knew I was not going to be distracted by rampaging toddler at critical moment.

veg steamed beautifully .. fish was fab .. mash just horseradishy enough
