What are your favourite ways to use up leftover roast chicken?

...as I've had to roast two chickens today (long story) and so will need to be rather creative over the next few days!

I usually make a pasta bake with added chicken and mushrooms served with garlic bread with my leftovers.

Chicken pie (white sauce, add leeks or whatever you have)

Chicken stock with carcasses - can be frozen

Fry onions, peppers, mushrooms & tomatoes with a little soy sauce then make a sandwich

Chicken chips & beans

Chicken in white wine

Chicken & mushroom pie

Chicken risotto

OK, have never made a risotto . Talk me through it please.

Also, can you really make stir fry with cooked chicken?? Never knew that!

And I usually cook the pasta first (cheating) as it never seems to cook properly in the oven for some reason.

To be honest I would only keep it till tommorow.
You could make a curry or something and freeze it tonight tho and it should be fine.

I meant if theres enough for 2 meals then freeze one (I know what I mean, sometimes)

We've got a mother and three baby foxes coming into our garden. I was watching the mother breastfeeding her ravenous cubs. She looked knackered, thin, fed-up. My heart melted and I left yesterday's chicken carcass out for her!!!

Delia has a lovely turkey curry in her main book for Boxing Day. I'd also have it with pasta and mayonnaise.
