Pasta Sauce - Insire Me!

I'm stuck in a pasta sauce rut and would love some inspiration for dinner tonight. Here are my criteria which make it a bit more tricky. It must be:

Vegetarian
Seasonal (so no lovely summer courgettes, peppers and aubergine but lots of leeks, squash, kale, mushrooms and every root veg under the sun)
Saucy (we prefer something that coats the pasta like ragu or pesto rather than pasta with chunks of something with it if that make sense)

It can contain any tinned beans or tomatoes or dried beans but as its for dinner tonight, preferably nothing that need to soak overnight.

I don’t really have a recipe as such, but with what you’ve listed there I’d probably do:
Tinned tomato base, maybe passata?
Tin of beans (tesco do a taco spice mixed bean salad which is yummy!)
Squeeze of Tom purée, squeeze of garlic purée or fresh garlic clove
Stock cube/real stock
Dash of balsamic or worcs sauce or wine

Add herbs (dried) or a bit of chilli or both. I use those tubes of pre-prepped garlic, chilli, basil etc. as they are so convenient.

Sauté off a finely chopped mixture of carrot, celery, onion. Add all the other stuff. Add a bean Tin’s worth of water and simmer it until that water has gone. I add finely chopped frozen spinach. Throw in fresh herbs such as basil at the end. The dc don’t notice the spinach because they think it’s basil!!

Do you eat fish? Maybe throw in a few anchovies? Or do you eat cheese? Add a bit of Parmesan or other strong cheese?

We like big pasta in our house, with deep crevices (so big shells, big twists etc) - they are more expensive but the dc eat them much more enthusiastically than boring penne!

Also, I make big batches of this type of thing and whizz up to a smooth purée. Then freeze in pasta sauce jars or similar type pots. I then just dump a jar full in with mince or roasted veg for a quick dinner. Or add extra chilli and put it into a dish, then make a little well and crack eggs into it, then bake til the eggs poach. It’s really tasty!

a white wine,stock,creme fraiche and cream.add to sautéed onion and garlic.mix with taglietelle.do you eat fish this goes great with prawns and salmon mixed in.
creamy roux.
pureed squash make a gorgeous unxious sauce.many versions online. this ones gorgeous.

sautee leek with onions and garlic.stock.bit of cornflour to thicken if you want/
creamy mushroom and kales sauce.
mascarpone milk roasted veggies tomatos etc.
cheese with broccoli sweetcorn and peas.
gosh so many.

Thank you both. Those are some great ideas.

I'm very tempted by the first one you linked kateandme. I might give that one a go and add some mushrooms to it when cooked to give it a bit more veg.

I don't eat fish but DP and DS do so good to get ideas with those too.

Yes Kate that one does sound good, w always have Red pasta sauces (eg tomato based) and it would be nice to try a different style

A favourite of mine in is a basic creamy mushroom pasta. Very gently fry lots of mushrooms in some butter, add some fresh thyme, cream, parmesan, salt and pepper. Eat only very occasionally! One that isn't quite within your specification but really nice if you have lost of kale is to fry some finely chopped onion, smoked bacon or chorizo and a bit of garlic in some oil, mix with some fussilli and kale (cooked together just adding the kale after the pasts) and add lots of parmesan.
