What's your go-to spaghetti carbonara recipe please?

I usually cheat and use a shwartz packet mix but would like to make from scratch later. What's your re cioe and me this please?

If there’s no Parmesan it’s just eggy bacon spaghetti....but if thats what he likes?

You can use cheddar instead of Parmesan with totally acceptable results.

Recipe chez etymology:
Bacon
Spaghetti
Bit under 1 egg per person
Plenty of cheese
Black pepper

I sometimes add onion to mine to get a vegetable into it, even though that may not be traditional. Also depends whether he would know if Parmesan was mixed in. My DF “doesn’t like” Brie but loves a dish I make with it where he doesn’t know it’s included.

I'd say the parmesan or pecorino is pretty much compulsory though or it would be a different dish altogether.

Add sage or thyme to the boiling pasta water. Make sure the water is well salted and keep it to slacken the lardons, spaghetti, egg and pecorino mixture. The sauce should be silky, so don't cook it any more after transferring the pasta into the bacon pan, add the eggy cheese and then a good ladleful if the pasta water and stir. Lots of black pepper.

No cream, no mushrooms, no onions, no packets.

Just eggs, lardons, pecorino (or Parmesan) spaghetti and water!

Why call it that then? Why not just call it creamy spaghetti or something? Imagine someone invited you over for a traditional Sunday roast and served you boiled mince and kippers - sure it’s a variation but ?????
