Does anyone have a favourite veggie cookbook they can recommend to inspire our meat free Monday’s. Ideally one with some quick recipes and some more interesting ones? Not Indian, nothing against Indian food but I don’t want to keep making veggie curry every week! I have had a recipe book purge so there is space for a new one.

Anything by Rose Elliot ticks ALL my boxes.

Her Bean Book is amazing, and I treated myself to her New Complete Vegetarian book for the kindle - worth every penny.

Lucky Peach: Power Vegetables. I've made a lot of recipes from this book since October and most have been awesome.

A modern way to eat by Anna jones is my number 1 Veg cookbook, followed by Ottolenghi plenty. Both are used regularly here, with a handful from each so often made that I can do them from memory :)

The "Oh She Glows" cookbook is good and my standby is the Moosewood Cookbook.
