Vegetarian sandwich ideas

I'm not vegetarian, but am trying to cut down on meat, so would like some ideas for veggie sandwiches as I find it easier to just make a big pile of sandwiches for everyone each day. I don't want to end up eating cheese sandwiches every day! I have recently discovered some nice veggie pate which is nice with tomatoes, but any other suggestions? TIA

I’m not veggie but meat free sandwiches that I like are peanut butter & banana, hummous and cucumber, egg mayo, cheese & marmite, falafel & salad in pita bread.

I tend to do veg platters with dips too.

Open and rinse well a tin of chickpeas.
Mash them with a bit of mayo and season to taste.

I could eat it all day long :D

Or, if you’re at home, garlic mushrooms on toast.

I have to stop now or I’ll go downstairs and make both Grin

Cold roasted veg is lovely - add some Brie for extra yum

Halloumi and mushrooms - still needs a cooking element but so worth it.

I find baps or wraps work better with veggie sandwiches. Normal bread goes too soggy for me.

Tomato and mayonnaise.
Cream cheese such as Boursin with avocado or cucumber.
Tapenade.
Peanut butter and banana.

As your not vegetarian, but cutting back on meat, don't forget fish sandwiches such as sardines or tuna mayonnaise, mackerel and thinly sliced apple is fab too!

apple sauce/falafel/slice of cheese/few dried cranberries

...altogether in a pitta bread. Love it!

Newly boiled egg, still hot, sliced and placed on the bread. Thinly cut tomatoes are placed on top of the hot egg slices and pinch of salt and pepper. Hot egg and tomato slices fuse together. It's ever so tasty. Its nothing like egg and nothing like tomatoes. It becomes something eise. Yummy. You can add grated cheese as well but simple egg tomato is yummy already without any addition. Or perhaps a bit of parsley or cress for extra colour.

Another variation, as above and this time instead of sliced tomato, add sliced cheddar or Edam cheese on top of boiled hot, sliced eggs. Again egg and cheese fuse together to make a new different taste. A bit of freshly ground black pepper on top. Again, yummy.

Try it, it's worth it.

Grilled or fried courgette with dollop of yoghurt or sour cream or mayonnaise on top. Eaten cold with or without bread.

Long sliced carrots first dipped into beaten egg mix followed by dipping into breadcrumbs and fried. Its very tasty when it's cold even the next day. You can add yoghurt or sliced mozzarella cheese with it inside sandwich bread.

Cold pasta salad. I know you asked for sandwich filling but..

French bread, opened lengthwise, add mozzarella cheese and sliced tomatoes and mint leaves or parsley. Very simple yet very tasty.

Cream cheese and chopped chives
Rucola , mozzarella and tomatoes with a small scraping of pesto on bread .Fresh Basil if you have it.

My dd loves grated carrots and cream cheese mixed together. Afaik it's her own creation.

Also sliced cucumber with cream cheese and sprinkle either some sesame seeds or poppy seeds to give a unique texture.

I used to love the mushroom pate from Holland & Barrett. Not sure if they do it still. It comes in a big sausage.

Hummus + any veg
Once made a sandwich with leftover home made veg pakora from the night before with a bit of butter and some raw onion - amazing.

Cheese, apple and celery with either mayo or yoghurt as the dressing. I like it all chunky but grated works too if you prefer a soft consistency. Probably better in rolls than sandwiches.

Apricot stilton with spinach and sliced pear. Mmmm mmmm.

Peanut butter and dates.

Cold beanburgers are a bit of a hit too, with a nice spicy chutney and some crisp lettuce.
