Spring greens

Want to use up a big bag of spring greens tomorrow, preferably in a veggie meal, but am right out of inspiration. All I can think of is a stir fry, but I'm a bit bored of them. Any more interesting suggestions?

How about doing green shakshuka? In this recipe you could just swap the cavolo nero and spinach for your greens
