Almond based disaster...

I've just baked a lovely chocolate loaf cake to take in for the school bake sale, but in my stupidity, forgot that a recipe containing almond is not suitable for a nut free school.

I need a recipe that I can substitute, without leaving the house (sleeping baby!). Lemon drizzle is out because I only have jif lemon.

I have plenty of flour, 4 eggs, 150g butter + some clover, cocoa, chocolate chips, vanilla essence, satsumas, and zero inspiration!

Ideally a loaf so it portions easily - help?

Just do a vanilla loaf and make a chocolate icing for it?

RockCrushesLizard · 06/02/2018 10:45

I'm going to sound like an idiot now, but how would you go about a vanilla loaf?
I'm rubbish without a specific recipe

I also have ginger, though that may not be very kid friendly!

www.bbcgoodfood.com/recipes/1940701/madeira-loaf-cake skip the almond and up the flour to compensate, if you don't have enough butter add a bit of veg oil. Put in a good glug of vanilla. Ignore the lemon, you don't need it. Stir through the choc chips if you feel like it.

Make the loaf again, but put flour in place of the almonds?

RockCrushesLizard · 06/02/2018 11:17

So I can just replace the almonds? That's good.

Would I do 100g flour for 100g almonds?

This but use satsumas instead of clementines. I've not made this one but I have made the Nigella version which was lovely. Unfortunately the Nigella one uses ground almonds but I googled for 'clementine cake with flour'.

Or replace almonds with semolina

UrbaneSprawl · 06/02/2018 11:34

How about this? It doesn’t really need the icing. It’s my standby for (nut-free) school’s bake sales, as all my other interesting recipes rely heavily on ground almonds, chiz, chiz.

Unless you have any polenta/maizemeal around, in which case a lemon polenta loaf (a.k.a. American cornbread) is another possibility.

Thank you all for your help! I've gone for replacing the almonds with plain flour, and it's now in the oven. Hoping for the best now!

We have sold nutty cakes whole before. They were shop bought though and in boxes, but they might accept it if it's really parcelled up and labelled. And I'm sure no one wants you to stress out about it!

RockCrushesLizard · 06/02/2018 21:33

The nutty one won't go to waste, I'm hungry!
The nut free version seems to have worked - good enough to pass muster for the kids anyway!

They'll love it, who doesn't love cake?!
