I think a potato that is not too dry and not too waxy. I like Albert Bartlett Elfe Potatoes from Ocado, any potato will work I have done peeled and unpeeled - both work equally well.

Top tip: put the potatoes in a wooden spoon to slice them - the knife cuts all the same depth then without worrying about cutting through or slicing fingers

I like king Edwards. I also slice them & micro the potatoes for a bit first and cool a few mins before adding the butter etc, then I don't have to wait too long for them to bake 😁

Baby or Charlotte potatoes in this house.
I slice on a wooden spoon and then steam them for 10 mins before putting them in the oven smothered in butter.

Haven't done them for a while - might have to cook them this weekend :o

I use sweet potatoes. I cut into them, and rub them with olive oil, then sprinkle them with Rosemary, basting them as they cook.

I also leave the well scrubbed skins on.
