two day old mussles in fridge - are they safe to eat?

Dp bought some fresh mussels on Wednesday - they have been in the fridge since. Do you think they will be safe to eat? I was going to simmer them with a bit of white wine and red pepper - is that a good way to cook them?

He is away for the w/e and I don't want to let them go to waste

simmer them, if they open up they're fine, the ones that stay closed are off and need to be chucked.

White wine, garlic and some finely chopped parsley (just a little). Don't touch anything that is not "open" after cooking and discard any ones that are open before cooking.

wash them in cold water first and pull off the 'beards' if they are closed tightly, put them in the pot. if not, tap them sharply and if they dont close, chuck em.
then, when you have cooked them, only eat the ones that are open.
