Season with salt and pepper, cook skin side first for 3-4 on each side in a lightly oiled, med-hot pan. Serve with a squeeze of lemon

Yep. Taste is wonderful. Don't hide it. In fact, I do it the same as Atleast, but without the lemon, or the salt, or the pepper...

I have it with cous cous and roast veg (courgette, cherry toms and red onion)

I love it served with a big pile of buttery spinach with a squeeze of lemon and tonnes of black pepper

Arghh realised my post only half sent! I was going to say gosh it's making my mouth water and so quick and simple too!! Amazing!

I bought the fillet yesterday from the market. Do you know I can keep it in the fridge before I need to use it?

Think I'm going to try the recipes above and keep it simple with some leafy green veg.

But what do you guys think of this recipe I found?

This is divine www.bbcgoodfood.com/recipes/7775/crisp-sea-bass-with-minted-fennel-and-radish-salad

When I bought seabass from my fishmonger on a Wednesday he told me I'd have until the Friday to eat it but that was with fish that had been caught the previous day. Presume it will be roughly the same for your piece

The sizzled ginger one is fabulous and so easy.
