Might not qualify as impressive to any decent cook, but I’ve always had good feedback when I do chicken breasts filled with a cream cheese stuffing and wrapped in bacon. There again the good feedback could just be incredulous friends being amazed that I’ve managed to serve up something edible Grin

I was going to suggest the above. It's my go to fancier than normal but not ott fancy chicken dish. I use boursin for the stuffing can prep chicken before hand and just bung em in oven for half an hour with some par boiled new pots and cherry toms in the same tray. Potatoes may need bit longer though depending on size

My mum does a really nice chicken, ham & leek pie.

I do a marinated chicken with roasted peppers, tomatoes, onions and potato wedges meal which is really nice (I actually do it without the potatoes for a v low calorie day meal).

Roast chicken & trimmings.

The Jamie Oliver recipe for Chicken Kievs is spectacular - particularly if you take the trouble to get the chicken and bacon from a good butcher.

This is not 'impressive' as in quite fancy, but it always seems to go down well and I have used it before as a dinner party dish. It's Hungarian chicken.

Fry sliced onions and sliced red peppers. Add dried paprika chicken and boneless chicken thighs. Brown chicken thighs off, add a tin of passata and cook on a simmer until cooked through. Before serving add a tablespoon of sour cream and combine through then serve with buttered tagliatelle.

Three spring to mind:

  1. Jamie’s epic roast chicken salad
  2. Either whole or bone in breasts with a tarragon cream sauce, served with new potatoes and green beans. Great as a Spring dish
  3. Any number of chicken curry recipes I have eg chicken pasanda etc

Mines a Mexican ( I think) chicken bake I got from Olive magazine.
Free range chicken coated with olive oil, garlic and smoked paprika .On a bed of butter beans, chopped butternut squash and a head of garlic. 15 minutes before it’s ready add a punnet of halved baby tomatoes and a handful of chopped basil.Mix all the vegetables and cook for the last 15 minutes.Just make sure the vegetables don’t dry out too much as the butter beans have a tendency to go crunchy. It’s lovely with rice.

There’s a really lovely Persian chicken with saffron, fennel and barberries recipe in the Persiana cookbook.

Fry 2 large onions (roughly diced) until golden brown. Add 8 bone in chicken thighs and brown a little bit alongside the ovens. You’re not looking for loads of colour.
Add a pinch of saffron and stir to coat everything. Add a couple of teaspoons of ground cumin, 1/2 tsp ground cinnamon, and the juice of 2 oranges. Season and stir.
Pour over enough boiling water to cover everything then add 2 fennel bulbs (cut into quarters) and 3 tablespoons of honey. Cover and simmer for an hour. You shouldn’t stir it too much as the fennel will break up (the books says to do it once at the 30 min mark).
After an hour add a couple of handfuls of dried barberries, stir carefully, cover and cook for another hour and 20 mins. Stir it (carefully) about 20 mins from the end.
Serve with basmati rice.
