Help! Wensleydale with cranberries and apricots...

We've been given a lump of each. Don't want to waste it, but none of us particularly like it as is/in sandwiches/on a salad. Does anyone have any good recipes for using it up? Thanks!

Wensleydale melts surprisingly well. Use to stuff chicken breasts wrapped in bacon or make a chicken pie base then top with a savoury crumble mix with the cheese.

I've used wenlesdale with cranberry to good effect in turkey, and leek pasties. I second stuffed chicken breast too.

No, but surely it'll just add a sweet/ savoury feel to whatever is being made? I don't think a bacon frittata would be harmed for the inclusion of a cranberry or two ... Wink
