Hi Fuzzbuzz,
Meal times can be tough for mums and children Smile
i work as a cook in a children's nursery/preschool, so i know how tough some Mum's can find this.
You don't mention gluten, so how about a nice healthy, butternut squash mac cheese?
Buy the prepped butternut squash if it's easier, although you will get more value for money buying a fresh one.
Put the prepped butternut squash in a pan with a little seasoning, boil, until the butternut squash is cooked. Drain some of the water out then blend. Either in a blender or with a stick blender. thicken with cornflour if you need to. Add some violife cheese (no dairy no soya), most supermarkets sell it now, then add to cooked pasta(either normal or GF pasta). viola! This goes down well with most children. let me know ho you get on Smile
