Chicken legs..

I am forever having either rice or chips with chicken legs, need some inspiration!

What would you do with chicken legs?

I make curries.

If you're not used to that, just buy a curry paste or a curry sauce at first.

Here's a very basic way to make a curry for someone without all the spices.

Take the skin off the legs

Chop up one onion
Gently fry for 5 mins in oil.
Then add one or two cloves of garlic which you've crushed
Cook for another 5 mins...stir regularly to stop it sticking...make sure it doesn't go brown.

Throw the legs in and add salt and pepper

Fry them for a bit ...5 mins
Now add your jar of sauce or, some curry paste and a can of tomatoes (chopped)

Let it simmer for about half an hour. Check the legs are cooked right through.

Serve with rice and fresh coriander.

You can also add a stock cube...vegetable or chicken and some extra water. It's better with that.

Add any veg you've got hanging about if you want. Or add a side of green veg.

Ah not a bad shout. We make curries fairly often (just pataks paste) but always use breast meat, don't know why I've never thought to use legs!

Bone-in chicken is best for curries in my opinion. It's far tastier.

Also chicken casserole/coq au vin. With green beans as a side.

Or cook the legs then take the meat off to add to a pie, I make a simple roux, add bacon and leeks and a puff pastry top.
