Chicken breast strips? Help!

I have 800g of these that I need to use up. Was going to do a chasseur/ casserole thing but I’m out of tomato purée and tinned tomatoes.

Any suggestions welcome, my mind has gone blank!

Fajitas
Traymake with peppers, red onions, mushrooms, new potatoes (I’d precook as chicken breast strips will cook much quicker than whole breasts,) chorizo if you have it.
Dust with paprika, thread onto skewers with cherry Tomatoes and courgette.
Make a sauce from honey, whole grain mustard and white wine.
Coat in bread crumbs and bake.
