I’ve ended up with 2cauliflowers as I didn’t use the use the one out of last weeks veg box. HIt me with your best soup recipes!

Not a soup recipe but I recently came across whole roasted cauliflower and it's delicious

Cauliflower is not great for soup IMHO as it's a brassica and kind of releases a farty type smell. I tend to stick to root vegetables and tomatoes and onions for soup. That said, I'm sure other posters are better chefs and will be along with some delicious recipes.

Roasted cauliflower sounds delicious, or perhaps cauliflower cheese? I ate a great roasted cauliflower recently in a warm pita bread with hummus and toasted seeds; it was delicious!

I love cauliflower purée, usually served with scallops, but I've never made it.

Cauliflower curry?

No soup recipes I’m afraid but I love cauliflower. My favourite is to blanch briefly, dip in flour, egg and then a mix of breadcrumbs and Stilton. Bake in the oven. Delicious!

The best soup I have ever eaten was called 'caramelised cauliflower'.
It was in a country pub in Cumbria. Since that time, about 18 months ago, I have been trying to replicate it at home to no avail

But I'd also think about cauliflower steaks or a Meera Sodha whole cauliflower curry (Gobi mussalam) - we had it recently and it was delicious
