Hi everyone! I am looking for ways to meal prep so that I can throw together a healthy-ish dinner. I eat alone half the week and find I don’t bother to cook properly and fill up on whatever’s hanging around...So far, I have bought a pack of those takeaway boxes from the pound shop to make my own ready meals. I’ve done bolognese, chilli, and hidden veg sauce. The other thing I do is a salmon fillet, potatoes and veg all in the steamer. (Bit boring) I have chopped some onions for the freezer - I also need to add carrots and celery to that.
I have also been grating whole blocks of cheese in the food processor to keep in the fridge. I guess what I need is some more exciting meal ideas that can be prepared in this way, or ideas of things you can keep in the freezer that aren’t processed rubbish? Or your quickest pasta sauce recipes? Thanks

You could do your own curry paste and portion it into ice cube tray for freezer.
One of my favourite: chopped onion, garlic, broccoli & mushroom (you can but it already frozen or use fresh) with noodles (whole grain) and "frozen spice cube" . Add Coconut milk to taste.
