Pescatarian month ideas

We've decided to cut out meat for the month of January, with a view to cutting down on meat after that. Happy to eat fish a couple of times a week though.
Hit me with your quick easy veggie/Pesci recipes, any slow cooker/tray bake ones would be especially appreciated!

I'm a veggie and favourites are
Dahl with kale and sweet potato
Risotto with pesto, peas and goats cheese
Mattar paneer
Roasted med veg and hallumi
Spanakopita
Baked potato with all sorts of fillings
Italian bean stew
Mexican rice
Pasta with lentil bolognese
Gnocchi with butternut squash sage and feta
Stir fries

Some favs here are
Sweet potato, chilli and tuna fishcakes
Grilled tuna steaks with a balsamic glaze
Cod fillets marinated in a mix of yoghurt, curry paste and mango chutney then baked in the oven
Salmon with a pesto crust
Oven baked Sweet potato falafels with pita, yoghurt and salad
Veg and 5 bean chilli with rice then leftovers in quaesidilla
Root veg and chickpea tagine with cous cous
Carrot, kidney bean and cumin burgers
Haloumi and veg skewers
Whatever needs using up in the fridge frittata
Pepper, courgette and kidney bean pasta bake
Pasta arabiata

Mmm this is making me hungry. I only have crisps and random buffet food in!
What's mattar paneer? (Is paneer the Indian cheese?) what do you have with it?

I'm considering this for February, want to do no spend January and my freezer has loads of meat in it.
We love fish but don't eat it much for no particular reason so would be nice to try new things.
