Veg with ham and dauphinoise potatoes?

On Christmas Eve we're having ham and dauphinoise potatoes, plus peas and carrots (my kids' request). I'd like to do another vegetable and had thought of red cabbage. However, I also want red cabbage with Christmas dinner the next day so maybe that is cabbage overkill? WWYD:

  1. ham, dauphinoise, peas carrots, red cabbage
  2. ham, dauphinoise, peas, carrots, mystery vegetable X?

The joy of cabbage is I can do it now and freeze it.

I’m planning the exact same meal for Saturday when my family come.

Are you planning a gravy or sauce?

Roasted butternut squash
Brocolli
Green beans

Mange tout or green beans?

Romanesco broccoli perhaps? Very pretty

I would be wary of red cabbage as it could look bleed into the dauphinoise (shudders at the memory of an inflight meal of pork, mash and red cabbage that looked like pink mush when I opened the box)

Another vote for leeks you can freeze them and they go well with the rest of the meal.

Ordinary green cabbage would be grand, that combination of potatoes, ham and cabbage is classic. Don't forget the mustard! Wine
