Hi! Even though only I will eat it, would like a tasty red cabbage recipe! I think my Mum used to cook it in apple juice with sultanas too but that was back in the 80's! Any ideas appreciated - thanks!

Delias red cabbage with cranberries - cooked quickly so the cabbage retains some bite.

I've been cooking the same for nearly 30yrs. This is the one recipe I have never changed as it's delicious and not too rich ..

Red cabbage shredded
I large onion chopped
2 cups orange juice or fresh satsumas squeezed
I normal apple peeled and chopped
Salt and pepper
Glug of olive oil

Sweat onions then add rest and stir then cook. Voila!

ooh those look good thanks!

I made red cabbage last night; shredded in ovenproof dish, cooked in balsamic vinegar, a bit of sugar, pepper. Cook for approx 40 mins. It should have sultanas but nobody here likes them with the cabbage.

Second Delia's red cabbage and cranberry too.

1 shredded red cabbage
1 grated apple
2 rashers of bacon
Two cloves of garlic
200 ml balsamic vinegar

Simmer the garlic and bacon together in a good glug of olive oil then chuck everything else in, lid on, simmer on super low for about an hour.

I always, always make extra because it's so fab and I have to have it the next day. Goes brilliantly with pigs in blankets as well because it's quite sweet.

I like to put a glug of mulled wine in at christmas. The spices are lovely.

So mine is:-
Red cabbage
Onion
Apple
Glug mulled wine
Glug balsamic vinegar
Teaspoon of brown sugar

Veinarde · 16/12/2017 17:29

1 red onion sliced and drizzled with cider vinegar
1 red cabbage shredded
Walnuts
Pomegranate seeds
Optional apple
Seasoned with salt, cider vinegar and olive oil

I add a mulled wine spice bag to mine - adds a lovely subtle flavour

Small red cabbage, cored and sliced
1 red onion finely chopped
150g unsalted butter
200ml red wine vinegar
50g Honey
100g Demerara sugar
I bay leaf
Thyme
Salt&pepper
Mix all together in roasting tin, cover with foil and cook in oven at 180ish for at least an hour, stirring regularly. Freezes well.

No typos, it really has got that much butter and sugar in Blushbut it’s divine and I only make it at Christmas, so I don’t care!

Growingboys · 16/12/2017 20:09

Brown sugar and ground cloves essential

Footle · 16/12/2017 22:05

Aesop, any cooking instructions for that?

Crumbs1 · 16/12/2017 22:29

Sweat onion. Throw in finely sliced cabbage, a couple of apples, star anise, a good sprinkle of muscavado sugar, a little mace, a little cider or red wine vinegar, cider and orange juice. A few sultanas. Bay leaf. A generous knob of butter to form glaze. Pop it all in Aga for about two hours. Make well ahead as it improves on reheating and can be frozen.

LesDennishair · 16/12/2017 22:50

Do you have to shoehorn mention of the AGA into every other post, Crumbs. Grin. It’s very vulgar.

AesopsMables · 17/12/2017 05:57

really simple. Just sweat onion down in oil until translucent then add the red cabbage/apple/juice and season.

I cook it on low with lid on for about 25 mins

Always taste better reheated too

i have tried all different versions as I love Xmas spices but it really doesn't need it, or sugar, as cooked in orange juice.

Swap oil for butter if you want it richer

Pikachuwithyourmouthclosed · 17/12/2017 06:00

Delia 's that you do in the oven. Never lets me down.

Paranormalbouquet · 17/12/2017 06:24

I use Janis Oliver’s version with fennel seed and bacon. Lovely and better reheated.

Footle · 17/12/2017 07:55

Fabulous, Aesop! Thank you.

IWouldLikeToKnow · 17/12/2017 08:26

This one is fab. Used it last year.

My MIL's recipe is lovely. Red cabbage, onion, Bramley Apple, golden syrup, sultanas, red wine and red wine vinegar. Chopped and shoved in together, boil then simmer for an hour or so. It is beautiful.

funnyfoursome · 20/12/2017 16:41

Wow these sound amazing - thanks everyone!
