Soured cherries v normal dried cherries

I'm making a pork/duck/chicken and pistachio terrine which uses sour cherries (I've made it before and it was yummy). However, I cannot get any sour cherries, I've tried about 6 different shops and the pork goes off tomorrow so I need to make it tonight.

I have managed to get normal dried cherries and cranberries. Do you think either will do instead, or should I just leave out completely?

There are two types of cherries: dessert cherries which are naturally sweet, and sour cherries which aren't. Sour cherries are grown for cooking. Their tart taste is good in cooking and even good in baking. Sugar added to sour cherries tastes great in a pie, while dessert cherries taste a little flat and would need some lemon squeezed in to balance it out.

I'm not sure. I think I would swap out for the cranberries if they are tart.

Not much help today, but Costco do bags of dried Montmorency cherries, ive never not found them in stock I use them in terrines and they are absolutely fantastic, but also Work well in cakes and chocolate puddings where you don’t want an overridingly sweet taste.

Just use the cranberries. It will be fine.

Thanks - I did put the cranberries in and then dripped the fat when it came out of the oven all over my foot (ow).

I was freezing it for later use, but had the end bit and it was lovely, although I do think the sour cherry combo was better, but the lemon juice thing didn't work at all.
