...contains bacon which is we don't eat. What's a good substitute? Pref non-meat

It is just to give a smoky back note - I am sure it would be fine without it, or you could use smoked salt (Tesco sell it).

Tbh you don’t need it at all. I make gravy by cooking the chicken on a trivet of carrots, celery and onions, then adding flour, wine and chicken stock to the juices, straining it, draining off the fat ( have a special hug for this) and simmering it. It’s lovely!

I make it without the bacon (and star anise). It's still lovely. I find the bacon cooks quicker than the chicken wings and catches anyway.
