Taste difference in Cognac

I'm gonna have a go a this for Christmas, it's not going to make much difference if I use Remy Martin or Martell VS is it? I've not had Martell VS before, is there much of a taste difference?

For a dessert it will make no difference.

Ah right, so not really noticeable, just when drinking neat.
