Lots of Heathly Simple recipes for my children PLEASSSSE!!

...sick of my boys only likeing rubish, so i'm useing the time (7 weeks holis) to start my boys on heathly food and maybe even help me to make dinner with me. So please as many heathly food recipes that you could tell me about the better, and i'm doing a big shop next week so i can get what i need then if i dont have it already that is!!

Easiest meal in the world - lots of vegtables with a knob of butter and melted cheese. My ds loves this. Also I fry mince and add tomatoes, onion and all the left over veggies in the fridge. This freezes very well also.

Steamed veg - ie broccoli, carrots, peas, sweetocrn, courgettes, peppers etc, mix with cooked pasta (try wholemeal, or begin with half and half) and grate cheese on the top.

Carrot sticks, pepper sticks, cucumber sticks and a cream cheese dip (I add chopped chives to it)

They could wrap up chicken or fish fillets in foil, adding a dash of lemon juice/olive oil, any herbs or pepper etc they fancy, then just cook for 25 mins + comes out lovely and tender, great with baked potatoes and steamed veg.

get them to make their own pizzas - either buy bases or use crumpets/muffins for speed, then lay out ingredients in bowls - tomatoes, ham, cheese, whatever - and pop them in the oven. serve with chunks of cucumber/tomato and homemade garlic baguette if you can be bothered.

Homemade chicken parcels with cheese and baked beans inside (I know sounds disgusting but DS loves it). Take chicken fillet and roll thin with rolling pin. add tiny amount of filling and roll up and secure with cocktail sticks. Dip in flour, egg and breadcrumbs (or in my case omit the egg as we have egg allergy) and cook
home-made soup. Take whatever vegetables you have, add tin tomatoes, herbs and black pepper to taste. Add low salt veg stock and cook for a whole with loads of liquid. Liquidise reheat and serve with fresh bread. Tastes better the 2nd or 3rd day when the flavurs have had time to develop.

Simple fish fingers/shapes

fish - any kind
breadcrumbs
egg
flour

coat fish in flour, then egg, then breadcrumbs. Cook in oven at 180C (fan) or 200C conventional for 20-25 minutes until brown & golden.

Fish is cooked when meat is white and flakes easily.
