Best Christmas stuffing

Hi all! Anyone have any yummy stuffing recipes? Not to stuff the bird with, but as a side dish. Would love a good sage and onion one but any other ideas welcome.
Also does anyone know if you can freeze the stuffing ahead of time, and if you should freeze it when uncooked or cooked?

I did one a few years ago with dried apricots, almonds and lardons mixed up with breadcrumbs. I think it was from a "Good Housekeeping" cookbook from 30 odd years ago, but I might have made it up by adapting something else, but it was delicious.

I do one with chicken livers that was originally a Delia recipe, it's known as murderer's stuffing in our house as when you blend the livers it looks like you've murdered someone.

I make a one with chopped chestnuts, caramelised red onion, fresh sage, breadcrumbs, egg and the insides of 97% sausages rather than sausage meat and then I do another the same but with chopped chorizo and a bit chilli. Make in advance in foil containers. I've had a lot of compliments over the years. I like the idea of one with chicken livers. Recipe?

I do a pork, cranberry and either chestnut or pistachio one.

Pork mince
Dried or fresh cranberries
Nuts
Onion
Sage
Breadcrumbs
Beaten egg
Seasoning

Sorry I don't have an actual recipe, I just chuck stuff in then fry a small bit off for a taste test. I'll be making it next week and freezing. Take it out the day before and reheat in the oven, tastes just as good as freshly made. It's lovely served on a dollop of braised red cabbage.
