Shortbread dough as pastry alternative - Bakewell Tart

I've got a very basic shortbread dough (butter sugar flour) sat in the fridge for a week (school cancelled a cake sale after 100 biscuits were already made, this is the scraps).
Could I make a Bakewell Tart, but use the shortbread dough as a rich shortcrust pastry alternative?
Any alternative suggestions (we are fed up of shortbread.....)?
