Anyone got a good Gingerbread Man recipe?

A little bit crunchy and if possible a little chewy too
Of all simple bakes, these and flapjacks defeat me.

I used the bbc good food one and they came out really nicely. Think I used the gluten free recipe

Second the bbc good food recipe, even my children can make them without incident
