Any easy but yummy recipes for veggie samosas? Need DS to eat more veg!

Need to get 19mth DS to eat more veg as he refuses, but Ive a sneaky suspicion he would eat samosas (fun finger food factor) any one got an easy but yummy recipe?

I haven't actually tried this recipe yet, but have been meaning to try it for a while:

Fry 1/2 chopped onion with 1/4 tbsp cumin, stir in 1/2 tsp mild curry paste and cook for a minute, then add 1 cubed boiled potato and 50g mixed veg, 1/2 tbsp lemon juice, optional salt.

Get 2 sheets of filo. Cut each sheet into 4 strips. Place a heaped tbsp of mixture at the top of each strip. Fold one corner of the filo over the filling to make a triangle. Then fold the triangle over and over in alternate directions until the pastry strip is used up.

Brush with melted butter and bake 5-6 mins at GM6 until golden.

sweat finely chopped onion + red pepper + carrot + celery in a little olive oil + cumin. season.
fill filo pastry:
-Lay square
-fill with 1tbsp mix
-fold left and right

  • roll like a cigar (can't find a better image!)
  • brush with a little oilve oil
-bake 10mn.

Could these be frozen - and would that be before or after they've been cooked off in the oven?

hi
would freeze them B4 baking & bake from frozen to avoid pastry going soggy when thawing.

You can also try spinash/cheese:
-sweat frozen spinash untill most water has evaporated. Strain really well.

  • mix with philadelphia cream cheese and some hard grated cheese. season with nutmeg.
  • fold and freeze.

Hi slim22 - those spinach ones sound yum! How long would you bake them for from frozen and at what temp? My oven is electric

hi,
about 15 mn at 180 degrees. (pop them in when oven already hot)

When baked, don't forget to cool before eating.
Best, cut them in 2 to make sure not steaming hot.

You can also try:

  • steam pumpkin.
  • mash and dry fry in non stick pan (to remove moisture) drizzle with a little honey and pinch cinamon. Add sesame seeds if no nut allergy.
  • Fold in filo pastry. Bake.
