top tips for making moussaka delicious needed

Has anyone got a favourite method/recipe for yummy moussaka? I've got some lamb mince to use by today and the aubergines etc but want to make it really tasty so that the school might try some (hopeful face)

Lots of tangy feta cheese between the slices? And for kids I'd go easy on the nutmeg.

Stir beaten eggs into a finished bechamel, so it puffs up beautifully in the oven. I agree with the feta.

really get those aubergines seared/scorched before layering them

I use yogurt, feta, egg and a bit of cornflour for the topping

lots of lovely oregano too.

Definitely egg in the sauce, bake the aubergine slices in the oven rather than frying them and they aren't slimy then, lots of nutmeg in the sauce too!
