Had roast chicken yesterday, making stock today - can I use it tomorrow?

It was a very expensive organic chicken, so I'm determined to get the most out of it. Can I use the stock tomorrow in a risotto or do I need to freeze t today?

no, you can keep in fridge, won't go off. just skim the fatty bits off the top before you use it

Stock can be kept in the fridge for up to a week.

If you refrigerate it tonight, and then bring it to the boil again tomorrow before using it in your risotto, you will be fine!
