Left over roast chicken - (I know its a MN legend)

I'm looking for inspiration... roast chicken is our usual roast dish but I could do with some extra ideas about what to do with left overs - my usual options are

• chicken soup
• chicken, mushroom and bacon pie
• Thai green chicken curry
• sort of cassoulet (chicken, chorizo and butter beans)
• chicken risotto
• thai chicken noodles (nigella recipe)

am keen to hear about spicy options I think!

Our lazy leftovers are chicken fajitas, ramen or chicken and pesto.

Delias left over creamy curry is a favorite in our house. Ds even took the spice mix to uni.

ooh ramen - thats an idea (I'll ignore DH's lack of interest in noodles...)

I'm not that keen on fajitas to be honest - love south american/mexican food but fajitas have never floated my barco so to speak - dd on the other hand loves them so I suppose every now and then my good mom should win!
