Pre heat the oven to 180/350gas/mk4, line 22x11x7cm loaf tin. Beat butter and sugar add the egg, then mashed bananas yog and Van ess. Sift in flour, bicarb, cinn and salt. Stir in raisins and nuts if using. Bake for 1 hour or until cocktail stick inserted in centre comes out clean.
It's an Annabel Karmel recipe, she calls it Best Ever Banana bread and I would agree with her, the whole falily have just enjoyed a slice!
