Today I made hobey and thyme roasted carrots and they were lovely.

Tired of the same steamed veg/roasted veg.

If anyone gas nice easy ideas that would be great

Blanch cauliflower florets for a couple of minutes, so still quite firm. Crumble/grate some blue cheese and mix with wholemeal breadcrumbs. Once the cauliflower has cooled slightly dip in seasoned flour, then beaten egg, then the cheesy breadcrumb mix and place on a baking tray. Bake for about 20mins in the oven.

My favourites are currently:

Celeriac and potato mash
Roasted cauliflower with chilli/spices
Baked sweet potatoes with chilli sauce and greek yoghurt
Aubergines roasted whole served with harissa mixed with yoghurt

Roast broccoli with lots of olive oil, salt, pepper and little chunks of garlic (my favourite).

Stir fry chunky slices of leek and bake with cheesy sauce.

Roast cauliflower with nutmeg. Leaves are nice roasted too with salt and olive oil but they don't need long.

Buttery celeriac and cauliflower mash (stick blender works best).

Stir fry broccoli with chilli and garlic.

Spinach with creme fraiche, nutmeg and garlic.

Thank You. I have never tried celeriac. Would love to try it.

I googled a bit and saw green beans, cranberries and almonds. Looks nice.

I like blanching, drying out and then griddling broccoli with some lemon juice and garlic dressing. I also love veg bakes like Briam and roasting cubed veg in the oven with different spice blends - e.g. one day with a tikka mix, another time baharat or ras el hanout.

Boil green beans until just starting to soften, drain, add oil, vinegar, mustard, garlic, whatever you like in your salad dressing, while still hot. Serve cold or room temperature.
Carrots with butter, parsley and a spoonful of Pernod.
Parsnip puree with cream and nutmeg
