How do you make your Spaghetti Bolognese?

  • Cook off a soffrito of onion, carrot and celery in olive oil and garlic
  • Brown mince and pancetta, deglaze with white wine
  • Combine veg and meat, add tinned tomatoes, tomato puree, splash of Worcestershire sauce, touch of sugar, bay leaf
  • Simmer for at least an hour
  • Stir in a little milk and butter, season to taste

Mine’s the same as HeyMickey’s but then add a spoonful of cream or crème fraîche in the last 5 minutes, helps it to stick to the pasta better. Nigel Slater’s tip that is.

Not authentic but:

Brown mince frying fat off. Drain mince. 500-750g Meanwhile soften finely chopped onion, and bit of finely chopped smoked bacon, add mince and 2-3 crushed garlic cloves. Add large glass of red and bring to simmer for 5/10 mins, add can chopped toms and 2tbs Tom puree. Season with salt and pepper and add oregano. I might also add basil and/or parsley if in fridge. Simmer for at least an hour. If there's cream in the fridge that need using I'll add a tablespoon.

Children have phoned from uni to create this. But I say again I know it isn't authentic.
