we've been given fennel bulbs in our latest organic veg installment. No idea what to do with them though.

Can anyone suggest some nice recipes with them please??

Slice very very thinly.
Peel an orange, take off pith and also slice very very thinly.
Interlay the slices on a flat plate, add olives and a homemade vinaigrette.#Serve with grilled meat.

braise them with a little oil in a pan - lightly fry without browning

once braised they are also nice with puy lentils in a salad

or, halve and then slice finely. Stick in a roasting dish with (per bulb of fennel) two chopped cloves of garlic, half a red chilli, sliced, zest and juice of half a lemon and a tablespoon of rinsed capers and a load of olive oil. Cover the dish with foil and roast at 200 for 30 min, take foil off and give it another 10 min. You then have a lovely pasta sauce.
