Heres something I do which is delicious amd stew like, perfect for autumn because really tasty and comforting.
One pan recipe.
Dice chorizo amd fry. Then add and fry onions and garlic. Add in fresh chopped tomatoes and diced pepper. Add a tin of chickpeas, some paprika if you like, cover and simmer for 10/15 minutes.
Turn heat down very low and stir in chopped feta. Wait til feta is melted down and eat.

The result is a creamy tangy and spicy stew. I dont bother having carbs with it. Do not salt, the feta and chorizo are salty enough.

If you use tinned chickpeas, make sure you rinse them well to get rid of the 'tinny' taste. The toasted pine nuts are described as optional, but don't leave them out as they really make the dish.

Love chick peas, I could eat them straight out of the tin. I make a dead simple salad with drained canned chick peas, chunks of tomato, sliced red onion, salt pepper, some chopped parsley, squeeze of lemon juice and a drizzle of olive oil. It makes a great side to a roast chicken or lamb chops, or just on its own for lunch.

If you buy canned chick peas look for the Asian brands such as East End, Natco and KTC as they are usually much plumper and softer yummy chickpeas...supermarket own brands can be hard little bullets.

Does anyone have any more soup recipes that they’ve tried and tested?
I’m doing weight watchers and chickpeas are free.
I love soup so want to try a few recipes.
